I have been on a cauliflower kick lately.
So many surprisingly delicious recipes that can be created
using this unassuming vegetable.
If you are ‘carb conscious’ as we aren’t,
this is a real winner and great substitution for
traditional potato salad and easily just as delicious…
4 cups cooked (steamed) cauliflower florets
1/2 cup chopped onion
3 boiled eggs (yolks removed and set aside, whites chopped)
1/4 cup mayonnaise or Greek yogurt
1 tbsp dijon mustard
1 tbsp green relish
sea salt & pepper to taste
chopped green onion or chives & parsley to garnish
paprika to garnish

Toss cauliflower, onion, and chopped egg whites in a serving bowl.

Blend together eggs yolks, mayonnaise, relish and mustard until creamy.

Stir into vegetables until well coated.

Season with salt and pepper.

Garnish with green onion, parsley and paprika
