POTATO CAULIFLOWER CURRY

POTATO CAULIFLOWER CURRY

My daughter invited us to dine with her a while ago and made the most delicious vegetarian meal.  The flavours for such a simple dish were so intense served with a side of fluffy rice and a few squares of crispy salty paneer, I just had to do a repeat performance for the two of us.  My husband, a meat lover, was amazed that a bowl of simple vegetables could be SO good. We had some leftovers so I mashed…

POTATO BROCCOLI CAKES

POTATO BROCCOLI CAKES

Broccoli, broccoli and more broccoli!  My world and garden are over flowing with broccoli! I’ve been working on another recipe for you using…wait for it….broccoli.  Did you try my last recipe for chicken and broccoli balls made in my little Omnia stove top oven?  Well, head on over to that recipe right here: Broccoli Chicken Balls. This time I’m using up some leftover mashed potatoes.  No leftover potatoes? Well it may be worth your time to boil up some taters,…

GRILLED CARROT DOGS

GRILLED CARROT DOGS

Today’s recipe is a little weird, even for me.  I’m not vegetarian and certainly not vegan.  I do like meat from time to time and now that we are living on the east coast am loving the abundance of fresh fish and seafood sometimes literally at our back door. But I’m really intrigued by some nutirent-rich plant-based dishes.  I feel it’s good to learn more about how other healthy people prepare their meals and about the ingredient selection they make….

FRENCH ONION MUSHROOM PASTA

FRENCH ONION MUSHROOM PASTA

Remember that extra effort we went through  the other day? Of course I haven’t forgotton. Here’s how you can make use of some, but not all, of that rich delicious onion mushroom mixture. I may have been overly creative throwing this together so feel free to add or subtract as you wish. It’s the way I get when I have the base of my meal sitting in front of me. Sometimes it works, sometimes not. This time according to…

ITALIAN SAUSAGE and TOMATO RISOTTO

ITALIAN SAUSAGE and TOMATO RISOTTO

Risotto is one of my all time favourite dishes for so many reasons. It’s the ultimate comfort food…easy, creamy and flavourful. The base ingredients keep so well in our tiny galley…rice, garlic, onion, chicken broth and parm. Easy to throw together…gather the ingredients and 20 minutes later…pure Italian heaven! With a few additions the basic recipe can be transformed into a multitude of options. This next recipe inspired by Smitten Kitchen by way of Martha Stewart seemed like quite a…

MASHED POTATO KALE CAKES with ROUILLE

MASHED POTATO KALE CAKES with ROUILLE

Let’s talk about leftovers. You know by now that I am a big fan of cooking once and eating twice. It just makes so much economical sense to me: Less fuel used Less planning Less work Fewer shopping trips to the market with fewer temptations Overall, less time taken. Leftovers may also be a nasty not-really-four-letter-word for some. !BORING! With a little imagination though I believe one can turn leftovers into some very creative meals. Look at what I did…

LEFTOVER STUFFING and TURKEY BAKE

I’m doing the leftover thing today. …leftover stuffing. …leftover turkey. …leftover turkey and stuffing thrown together with a little gravy and a side of homemade cranberry sauce (my recipe here) made a very tasty evening meal. …and all made on the stove top. LAST of the LINE TOMATOES

LAST of the LINE TOMATOES

Last can of tomatoes… Last onion… My little alcohol stove filled with the last of the fuel… And this Galley Kat has run out of creative ideas… …almost…   I made a batch of my Two Ingredient Tomato Sauce for a simple pasta supper tonight… …but being ever conscious of time and stove fuel economy, I doubled the amount of pasta we needed. This gave me about 4 cups of cooked pasta and about 1.5 cups tomato sauce. To the…

PASTA WAFFLES

PASTA WAFFLES

I found another great use for leftover pasta… Pasta Waffles… …then turned them into the base for our morning fried egg sandwich.     PASTA WAFFLES (makes enough for 4 waffles) 2 cups cooked angel hair pasta 2 tbsp flour 1/2 tsp baking powder 1 egg Whisk egg then stir in the rest of the ingredients. Scoop portions onto heated waffle iron and cook until steam subsides and both sides are brown and crispy.   Now load your sandwich.. spread…
