The end of our thirty day Whole30 quest is not the end of our Whole30 quest. Each eliminated food group has to be re-introduced one by one. At the time of this road trip we have added non-grain alcohol/wine back into the mix….obviously not to be included in our road trip menu. Looking back over the month, I can’t think of anything I would have done differently.  Variety in our meals made it all very enjoyable.  Good planning was key to keeping on track. I found the creativity of finding substitutes for some things (mostly condiments) challenging but there is a whole world wide web of exciting recipes to choose from. Our Whole30 Thirty Day reboot is almost over. Just four days to go! I’ve found that fitting in three full meals works best when the second is light, like a snack or as today, a soup.  I located another of my daughter’s delicious creations, modified it to make it Whole30 compliant, used a very tender cut of beef and made her lettuce wraps.  Just one little filet mignon was all we needed for the two of us.  On the menu…

Barely a week to go to the 30-day mark and we’re still going strong. As challenging as it’s been to create meals without dairy, grains, legumes and sugar, we’ve eaten really well and don’t feel at all deprived. Breakfast Breakfast Pizza Very simple to throw together. We made it through another Whole 30 reboot day with our visitors. That Greek yogurt on the smoked salmon and waffled potatoes was hard to resist…but we did. The slice of bread and butter served with the lunch-time soup was so tempting…but we remained steadfast. And that glass of wine served with supper… really tough…but we endured. Part of the ease in making this Whole30 regime work is keeping sequestered from outside challenges like dining out. Entertaining guests also adds a new dimension to our culinary journey.
