SUPER EASY SAVOURY HAND PIES

Hi there Galley Folks.  I’ve been pantry diving again, searching for easy to make meals with things typically on hand. The likes of canned salmon, tuna or crab.  The likes of frozen puff pastry.  Add to this an egg, some cheese and chopped veggies and you have a delicious little meal of hand pies. Once I thawed the pastry, I cut it into squares.  And […]

MEDITERRANEAN BAKED FISH

Good day to you all my Galley Friends.  I hope you are all well and ready for another treat from my little kitchen.  I must admit, that I really have been missing our dear sail boat, and when meal time rolls around I especially miss my very compact but efficient galley. Cooking minimally has become so engrained, that even with more conventional appliances, I still […]

STUFFED BAKED HADDOCK

I have a simple dinner for you today my Galley Peeps. Delicate white fish, some salad crab and buttery crackers crumbs, cooked to perfection in barely 20 minutes. The preparation was super simple too. Fish in pan, a couple of grinds of salt and pepper.  Crumbs, melted butter, seasonings all mixed with crab meat. Sprinkled generously over the fish. Baked. Could it be any easier? […]

MAY ROUND-UP

My goodness this month went fast!   We’ve been so busy dividing our time amongst getting the boat ready for her spring splash, preparing for guests and tending to getting our new-to-us gardens cleaned up that it’s left little time for anything else. I did take the time though to put together a list of your favourite Galley Kat recipes for the month of May. […]

SALMON LOAF with DILL SAUCE

Since we’ve been doing so much outdoor work in the garden lately, I haven’t been keeping up with supplying our land galley.  Funny really how I still provision like we are still onboard.  Cans of this and that.  Lots of grains.   Plus more and more we’ve run into friends and some family members who are either cutting back on carbs or for health reasons […]

CAPTAIN COOKS: BAKED HALIBUT in LEMON CREAM SAUCE

He’s on a roll.  Second Captain Cooks in less than a week (his last creation here).  This time he made us an incredibly delicious fish dish in my daughter’s kitchen as we are currently homeless and at the time we hadn’t yet found a home for our boat. It is super easy to prepare.  Just season the fish well… Prepare the sauce and let it […]

BAKED GREEK SHRIMP with TOMATOES and FETA

Now that the weather is improving…slowly…but any improvement is welcomed… I’m beginning to make plans for summer boat life.  This means easy quick meals, prepared with simple fresh ingredients. Tonight’s meal was one of those winners…so much so that although I made enough for two servings we both wished we could have gone back for seconds. Onions and lots of garlic sent wafts of intoxicating […]

PORTUGUESE COD, POTATO and EGG CASSEROLE

We do love our fish.  Haven’t had a lot of luck catching the critters during our summers on the boat but we do dream someday of improving on this skill.  When we are lucky enough to get hold of fresh fish it’s a feast aboard.  With a little pretending tonight I created this Portuguese dish with some fresh cod found at our local fish market. […]

COD FISH CASSEROLE

I made this simple cod dish craving something warming and comforting wishing away those last few days of winter.  Originally I’ve made it baked in a conventional oven but realized that it could easily be reproduced in my little Omnia Stove Top. Basic ingredients, readily available. Cod filets poached in milk… …then mixed together with seasonings and mashed potatoes. Baked in individual ramekins it made […]
