SUPER YUMMY LEMONY PASTA with CHICK PEAS and SCALLOPS

Well hello there folks.  Thanks for stopping by today and do I ever have a wonderful creation for you!.  It began with a simple pasta concoction earlier this week using my new spice crush…Urfa Biber (I haven’t yet found a local source but this company provided a very good online service – click here)…it’s a Turkish spice that offers a wonderful hit of heat without all the fire.  On a 1-10 heat scale it measures in at about 4.  The dish…

MAY ROUND-UP

MAY ROUND-UP

My goodness this month went fast!   We’ve been so busy dividing our time amongst getting the boat ready for her spring splash, preparing for guests and tending to getting our new-to-us gardens cleaned up that it’s left little time for anything else. I did take the time though to put together a list of your favourite Galley Kat recipes for the month of May. Simply click on the caption of each image for the recipe link. First way at…

SALMON LOAF with DILL SAUCE

SALMON LOAF with DILL SAUCE

Since we’ve been doing so much outdoor work in the garden lately, I haven’t been keeping up with supplying our land galley.  Funny really how I still provision like we are still onboard.  Cans of this and that.  Lots of grains.   Plus more and more we’ve run into friends and some family members who are either cutting back on carbs or for health reasons can’t tolerate gluten.  So I’ve been compiling a few recipes from time to time to…

CAPTAIN COOKS: BAKED HALIBUT in LEMON CREAM SAUCE

CAPTAIN COOKS: BAKED HALIBUT in LEMON CREAM SAUCE

He’s on a roll.  Second Captain Cooks in less than a week (his last creation here).  This time he made us an incredibly delicious fish dish in my daughter’s kitchen as we are currently homeless and at the time we hadn’t yet found a home for our boat. It is super easy to prepare.  Just season the fish well… Prepare the sauce and let it spend a few minutes  in the oven. Now that we are back on the water,…

BAKED GREEK SHRIMP with TOMATOES and FETA

BAKED GREEK SHRIMP with TOMATOES and FETA

Now that the weather is improving…slowly…but any improvement is welcomed… I’m beginning to make plans for summer boat life.  This means easy quick meals, prepared with simple fresh ingredients. Tonight’s meal was one of those winners…so much so that although I made enough for two servings we both wished we could have gone back for seconds. Onions and lots of garlic sent wafts of intoxicating aromas through my land galley.  Fresh tomatoes and lots of parsley topped off the base…

PORTUGUESE COD, POTATO and EGG CASSEROLE

PORTUGUESE COD, POTATO and EGG CASSEROLE

We do love our fish.  Haven’t had a lot of luck catching the critters during our summers on the boat but we do dream someday of improving on this skill.  When we are lucky enough to get hold of fresh fish it’s a feast aboard.  With a little pretending tonight I created this Portuguese dish with some fresh cod found at our local fish market. Starting with some sautéed  onions and garlic, the rest was easy. Sliced mini potatoes and…

COD FISH CASSEROLE

COD FISH CASSEROLE

I made this simple cod dish craving something warming and comforting wishing away those last few days of winter.  Originally I’ve made it baked in a conventional oven but realized that it could easily be reproduced in my little Omnia Stove Top. Basic ingredients, readily available. Cod filets poached in milk… …then mixed together with seasonings and mashed potatoes. Baked in individual ramekins it made a belly-warming supper for the two of us served with a side of roasted carrots….

SPICY SALMON BREAKFAST MUFFINS

Handheld breakfasts are a real bonus for  busy folks.  Especially important for she who mans the galley but would rather be out sailing.  Healthy, make ahead, this next recipe is perfect for a tasty on-the-go meal. I make them in the evening, clean up all the cooking mess, stash them away in the refrigerator so all we have to think about in the morning is making that first cup of coffee before heading out. They were perfect added to a car…

EASY STOVE TOP SALMON

EASY STOVE TOP SALMON

Most of the time our onboard meats are grilled on the barbecue. Captain Francois (AKA Captain Cook) is usually the one who ‘mans’ that appliance. But today the weather was rainy, we had taken the barbecue down to mount the full boat enclosure and I had already taken our proposed grilled salmon from our home freezer to marinate. Being the resourceful Galley Kat that I am (or have to be on a boat) I wrapped those sweet juicy jewels of…
