DIETARY REBOOT – Days 19 and 20

We made it through another Whole 30 reboot day with our visitors.

That Greek yogurt on the smoked salmon and waffled potatoes was hard to resist…but we did.

The slice of bread and butter served with the lunch-time soup

was so tempting…but we remained steadfast.

And that glass of wine served with supper…

really tough…but we endured.


Breakfast

Mashed Winter Vegetable Waffles

with

Smoked Salmon

Minus the Greek yogurt topping. Wheat flour omitted.

Lunch

Supper

Grilled Salmon

with

Horseradish Avocado Sauce

Side Green Salad and Roasted Potatoes

for salmon

1 salmon filet

1 tsp hot Old Bay seasoning

1/2 tsp dried dill

1/2 tsp sea salt

1/2 tsp ground pepper

2-3 tbsp butter or neutral oil

Coat both surfaces of salmon with the dry rub mixture.

Dot with butter or drizzle with oil.

Set on foil or a grill pan.

Cook on a heated grill or in an oven at 375 ° for 15 minutes

until flesh flakes but is still moist.

While the fish is cooking throw together the sauce.

1 avocado

2 tbsp mayonnaise

2 tbsp horseradish

juice from 1/2 lemon

2-3 sprigs of fresh dill, chopped

2 tbsp capers

sea salt and pepper to taste

Mash avocado and blend in the remaining ingredients.

Pile generously on a serving of salmon.
