CREAMED CORN CASSEROLE

Hello there my Galley Folks. Glad you stopped by today because I have a tasty little casserole for you to try. I made it as a side dish for Easter dinner and F loved it so much I had to make it again…and again…and again.
There’s something about the buttery crunchy topping and the custardy sweetness of the corn in each bite that makes it so delicious.
The best part is that it’s made with most things you probably already have in your pantry. A couple of eggs, some corn niblets and a can of creamed corn. I made my own HOMEMADE CREAM-STYLE CORN which gave it so much more richness but a commercial type of creamed corn is just fine too. I used crumbled Ritz crackers but have also tried my on-hand CRISPY TOPPING. Ritz are very rich and buttery but I like the ease and no doubt more healthy CRISPY TOPPING (something I always keep in my pantry)
It works very well baked in a conventional oven but I love how it is equally perfect in my Omnia stove top oven.
Creamed Corn Casserole
Equipment
- Omnia stove top oven For the ovenless
- Baking dish For conventional oven users
- Mixing bowl
Ingredients
- 2 eggs
- 1 Cup creamed corn
- 1 Cup corn niblets drained or frozen corn
- 2 Tbsp flour
- 1/2 Tsp salt
- 1/2 Tsp pepper
- 1 Tsp garlic powder
- 1/2 Tsp onion powder
- 1/4 Cup grated Parmesan
- 1/2 Cup ritz crackers crumbled
- 2 Tbsp butter melted
Instructions
- In mixing bowl whisk eggs.
- Mix in the remaining ingredients up to and including grated parmesan.
- Scoop into prepared baking dish and sprinkle crush crackers evenly over top
- Drizzle with melted butter
for Omnia stove top users
- Cover baking dish and place on pre-heated base plate on high for 5 minutes
- Reduce heat to medium low and continue to cook for about 30-40 minutes, or until mixture is set but still soft when pressed with back of a spoon and crumbs are crispy
for conventional oven user
- Place baking dish in pre-heated 350 ° oven and bake for about 35-40 minutes, or until casserole is set and crumbs are browned and crispy
