CRUSTLESS TOMATO QUICHE

CRUSTLESS TOMATO QUICHE

When I first made this recipe, we were on the boat and I kind of just dumped everything into the pan, plunked the cheese on top and cooked it in my Omnia stove top oven.  It was delicious but not terribly pretty.  Notice how I tried to dress it up with a little basil? It did the trick as far as a healthy, easy and tasty boat dish but we are expecting more visitors soon at our little home by…

APRIL ROUND-UP

APRIL ROUND-UP

It’s surprising to me sometimes what you folks are looking for when you search for Galley Kat recipes.  Sometimes if runs the line of special holidays as it did last month. Lots and lots of Irish/Saint Patrick’s Day hits.  And I shouldn’t be surprised at the delicious Easter Trifle because, well, it was Easter and it is a truly easy dessert. But why Batsaria received almost as many search hits as the trifle was a stunner.  Don’t get me wrong….

EASY BREAKFAST SANDWICH

EASY BREAKFAST SANDWICH

To the ‘easy’  I should add versatile for this next recipe.  I first made them spread on parchement paper on a sheet pan in our land oven.  Using a cookie cutter made them the perfect size to top a toasted English muffin. You tried my recipe for those didn’t you?  No?  Well hop to it…recipe link here As I now believe almost anything cooked in a conventional oven is possible in the Omnia Stove Top oven, why couldn’t these?  So…

SAVOURY BAKED NOODLES (KUGEL)

SAVOURY BAKED NOODLES (KUGEL)

I love kugel, especially the savoury kind.  Well, in truth I love anything with pasta and cheese.  It’s the ultimate comfort food especially welcomed now that we are heading into some chilly days.  I call it my hibernation food. This next recipe was made to be a complete meal with spinach and mushrooms and lots of dairy for protein.  I baked it no-oven-galley-style in my stove top Omnia but for you land folks it easily transforms to a more traditional…

BAKED EGGS IN ROASTED PEPPERS

BAKED EGGS IN ROASTED PEPPERS

Chilly rainy days mean cooked breakfast aboard R.E.D.  I had some fresh greens, peppers and farm eggs just begging to be turned into something belly warming. The greens I used were a mix of baby kale and arugula which gave a more crispy result.  Small chopped spinach leaves work well too.   Choose your peppers wisely if using the Omnia stove top oven.  They should be small enough to sit as flat as possible.  Also, when cutting them try to…

STOVE TOP BREAKFAST CUSTARDS

STOVE TOP BREAKFAST CUSTARDS

This little breakfast treat was surprisingly easy.  I stumbled onto the idea while reading an article about the sous vide method of cooking and wondered why I couldn’t recreate these in my stove top Omnia oven.  The water bath method takes one hour of cooking time and since cooking fuel/electricity is at a premium on the boat I thought that surely I can cut that time in half.   I laid all my ingredients out on the counter, whipped up…

PORTUGUESE COD, POTATO and EGG CASSEROLE

PORTUGUESE COD, POTATO and EGG CASSEROLE

We do love our fish.  Haven’t had a lot of luck catching the critters during our summers on the boat but we do dream someday of improving on this skill.  When we are lucky enough to get hold of fresh fish it’s a feast aboard.  With a little pretending tonight I created this Portuguese dish with some fresh cod found at our local fish market. Starting with some sautéed  onions and garlic, the rest was easy. Sliced mini potatoes and…

EGGNOG DUTCH BABY

EGGNOG DUTCH BABY

It’s surprising how little effort it takes to throw together something special for a Boxing Day breakfast or brunch.  With the help of some Christmas gnome magic and all the flavours that speak of the season this creamy concoction was ready in no time. For the purpose of boat galley cooking it was made in my stove top Omnia oven but in a conventional oven it’s cooked in a cast iron skillet. It puffed up beautifully (thankfully that’s as far…

LAYERED VEGETABLE BAKE

LAYERED VEGETABLE BAKE

Happy Meatless Monday Galley Peeps. The following is a little simple economical vegetarian dish for tonight’s supper loaded with lots of rich layered veggies, some eggs, and milk. Even though I now have the Omnia silicone insert, I still prepare the pan with a good coating of my homemade pan release (recipe here)  Topped with freshly grated parmesan. Then baked in my stove top Omnia oven. When slightly cooled, slice serving portions and sprinkle with your fave hot sauce. It’s…
