HOMEMADE TZATZIKI

Even the most ordinary can be turned into something special
with a bit of thought….
Our little cockpit snack…
some of our favourite chips (black pepper and lime)…
some homemade tzatziki (see recipe below)…
some fresh veggies…
and a frosty can of Captain’s ‘double O’ beer.
HOMEMADE TZATZIKI
1 cup Greek yogurt
1/4 large English cucumber, cubed
1 tbps sea salt (for salting the cucumber)
1 tbsp lemon juice
1 clove garlic
1 tbsp fresh mint
1 tbsp fresh dill
sea salt & pepper to taste
Place cucumber in collander and sprinkle with salt (*see Galley Kat Note below)
Let stand for 30 minutes.
Press out as much of the juice as possible.
Combine all ingredients in a bowl and process with your blender of choice
(onboard I use our little Kitchen King Pro)
Season according to taste

Once I have salted the cucumber,
I like to reserve a couple of tablespoons of cubes
to add after blending to give some texture.
