SUPER YUMMY LEMONY PASTA with CHICK PEAS and SCALLOPS

SUPER YUMMY LEMONY PASTA with CHICK PEAS and SCALLOPS

Well hello there folks.  Thanks for stopping by today and do I ever have a wonderful creation for you!.  It began with a simple pasta concoction earlier this week using my new spice crush…Urfa Biber (I haven’t yet found a local source but this company provided a very good online service – click here)…it’s a Turkish spice that offers a wonderful hit of heat without all the fire.  On a 1-10 heat scale it measures in at about 4.  The dish…

TEX MEX RISOTTO

TEX MEX RISOTTO

Here’s a tasty one for you Galley Peeps.  It was inspired by one of our home delivery plant-based meals.  A simple risotto with a Tex Mex flair. You’ve probably noticed that I’m big on making my own spice mixes.  For one thing, in my tiny galley there’s precious little space for a gazillion spice containers.  And we do love our Mexican type foods so this Tex Mex combo has become a favourite.  We love a little heat too so I…

PRESSURE COOKER ‘ROAST’ CHICKEN and BONE BROTH

PRESSURE COOKER ‘ROAST’ CHICKEN and BONE BROTH

I have a super easy and quick two for one recipe post for you today, my Galley Peeps.  In truth it’s actually three because I added my recipe for gravy mix which comes in handy if you don’t have real chicken stock on hand.  Now that we are off-season country dwellers, I have become very conscious of supporting local enterprises.  My latest find is ordering vegetables and meats every two weeks from a nearby farm.    They send a list…

HONEY GARLIC SALMON – a captain cooks creation

HONEY GARLIC SALMON – a captain cooks creation

Encouraged by the delicious results and popularity of his Honey Roast Duck a while ago (recipe here),  Francois asked permission to invade my land galley once again and I’m lovin’ it!  He cooks (I’ve never had any of his creations that haven’t  been super delicious).  He cleans up after himself (how could I ever complain about that). Added to that, he’s just an all round great guy and he kills spiders for me.  How could a relationship be any more…

GREEK INSPIRED MEATBALLS

GREEK INSPIRED MEATBALLS

Just because I’m not a football fan (oh the shame!) doesn’t mean I can’t offer you something yummy to nosh on during this year’s big game. Just throw meat and all  into a big bowl, dive in with both hands (properly washed of course) and squish all of those aromatic ingredients together. Serve warm with some tzatziki for dipping and a side salad. An icy crisp beer rounds off the presentaion. I’ve added a recipe for a quick Greek Salad…

MEDITERRANEAN-STYLE LEMON CHICKEN

MEDITERRANEAN-STYLE LEMON CHICKEN

Time to add a little heat to the galley today.  Another chilly rainy day  and I have a good book to curl up with.  No time to be messing around with time consuming meals. Six chicken thighs and a handful of vegetables, some olives and lemon for a Mediterranean flair and we had a tasty meal in a little over one-half hour. Being the frugal Galley Kat that I am, I shredded the remaining two thighs, dumped them back into…

GINGER POACHED EGG SOUP

GINGER POACHED EGG SOUP

Today’s recipe qualifies as an easy meatless meal. Lots of garlic, broth and ginger for the base. Eggs and bok choy filled in the rest to give us a well-rounded nutritious supper.   I used vegetable broth but chicken or beef broth would add extra dimension.  I’ve also used a spoonful or two of miso paste in the past for that added immunity-probiotic boost. Loosen the miso with a bit of broth or water then stir in at the end…

BAKED GREEK SHRIMP with TOMATOES and FETA

BAKED GREEK SHRIMP with TOMATOES and FETA

Now that the weather is improving…slowly…but any improvement is welcomed… I’m beginning to make plans for summer boat life.  This means easy quick meals, prepared with simple fresh ingredients. Tonight’s meal was one of those winners…so much so that although I made enough for two servings we both wished we could have gone back for seconds. Onions and lots of garlic sent wafts of intoxicating aromas through my land galley.  Fresh tomatoes and lots of parsley topped off the base…

SPAGHETTI SQUASH AGLIO e OLIO with SPICY GRILLED SHRIMP

SPAGHETTI SQUASH AGLIO e OLIO with SPICY GRILLED SHRIMP

In keeping with our Whole30 reset, I made a typical pasta dish for tonight’s dinner using spaghetti squash to replace the ‘forbidden for now’ grain,  and since spaghetti squash is rather bland on its own, I spiced it up with some very zesty grilled shrimp and lots of garlic. I also omitted the Parmesan as per Whole30 regs but it would have added another layer of flavour.  Another thing I learned about spaghetti squash is that to get the longest…
