SMASHED SALT & VINEGAR POTATOES

Now that my little pressure cooker is an integral part of our onboard life,

I can rustle up almost anything in a matter of minutes…

…baby potatoes cooked in 3 minutes…

 

…them smashed, barbecued and ready for a yummy cockpit supper.

 

SMASHED SALT & VINEGAR POTATOES

quantities for this recipes are your personal choice,

but you may want to make lots.

They are that tasty.

baby potatoes

olive oil

sea salt & pepper

rosemary

apple cider vinegar

Boil potatoes until tender or cook in a pressure cooker for 3 minutes.

Place on a piece of foil and smash with a fork to flatten.

Drizzle liberally with olive oil.

Season well with lots of salt, pepper and rosemary.

Place on hot grill for about 10 minutes until they begin to brown.

Baste often with vinegar.
