How about a little Mexican-Greek fusion for supper tonight?
Here is something I brought onboard this summer that I didn’t use….
Canned spinach is kind of gross (in my humble opinion).
….but when I was provisioning this summer, I thought that it might come in handy
should we have nothing leafy green or veggie
and couldn’t or didn’t want to tramp through a little village to find something fresh.
As it turns out, it’s pretty darn good…
in this recipe anyway…
1 can spinach
2 green onions
2/3 cups crumbled feta
3-4 sun dried tomatoes, chopped
1 tsp dried dill
1 tbsp chopped frsh mint leaves
Mix the first 6 ingredients in a bowl
Spread evenly on 3 tortillas
Press the other 3 on top
Grease your grill and brown quesadilla on each side.
Cut into quarters and serve with some easy Homemade Tsatziki
