NO FLOUR PANCAKES

This recipe is pure genius!
Just 3 ingredients..
smashed bananas, 2 eggs and a touch of baking powder.
and no flour (for those gluten challenged)…
NO FLOUR PANCAKES
1 banana
2 eggs
1/8 tsp baking powder
coconut oil for griddle
 
Whisk eggs in small bowl.
Add a ripe banana and mash until it mixes well with the eggs.
Stir in the baking powder.
Cook on a hot griddle smeared with a bit of coconut oil.
Flip carefully and brown on second side.
 
That’s all there is to it!
Too easy!
…and perfect for your gluten intolerant guests.
Serve with fresh fruit and maple syrup…
…and a bit of crispy bacon would be nice.
