EASY TUNA FRITTATA

What can a can of potatoes, a few eggs and a lowly tin of tuna give you?
Breakfast for two for two days,
that’s what!
EASY TUNA FRITTATA
Stove top version
4 servings
1-2 tbsp of your favourite cooking oil
1 can of potatoes, drained & chopped
1/2 cup chopped onion
1 can tuna in oil, not drained
6 eggs, lightly beaten
1 handful parsley, chopped
1/2 tsp baking powder
1/2 tsp sea salt
A hefty grind or 2 of pepper
1 tsp dried dill
2 tbsp fresh lemon juice (plus wedges for serving)
In fry pan, sauté onion until browned lightly.
Add potatoes and continue to brown slightly.
Stir in tuna including the oil.
In baking pan or Omnia stove top pan very well greased with Goop
spread tuna potato mixture evenly.
Whisk together the remaining ingredients
and pour over tuna mixture
shaking and swirling the pan to distribute well.
For Omnia set on pre-heated base
and cook for 45 minutes over medium low heat.
For conventional oven baked at 350 °
for same amount of time
or until mixture is browned around the edges and set.
Served warm with a wedge of lemon
and a steaming cup of your morning coffee.
