EASY HOLLANDAISE

I know that keeping packaged Hollandaise mixes onboard is an easy quick fix
but the real thing is just as easy and quick and tastes SO much better…
All you need is the following:
2 egg yolks
1/2 tbsp fresh lemon juice
1/4 cup butter , melted
pinch of cayenne
dash of sea salt
Method:
In metal bowl whisk yolks & lemon juice together until thick and creamy
(about 3 minutes)
Place bowl over simmering water (be careful bowl doesn’t touch the water)
Gradually whisk in melted butter continuing to whisk until thickened
Top off with cayenne and salt
Sometimes I add a tiny splash of Worcestershire sauce & Dijon.

 

Works great over eggs benedict, eggs florentine, cooked asparagus.
Today I served it over toast, poached eggs,
with slices of avocado and lots of cracked pepper.
Makes approximately 1/2 cup (just enough for 2 hungry sailors).
