GALLEY CAKE MIX

GALLEY CAKE MIX

Continuing on with simplifying my life in the kitchen/galley, I have a super fun recipe for you this week. Those who have been following along for a while, know how much I dislike commercial preparations, preferring instead to make my own whenever possible and practical. Growing up in a small farming community with a father who always preached ‘the closer to nature, the better’ and in a time when convenience foods were just becoming popular, we ate mostly locally grown…

GALLEY CREAM OF ‘WHATEVER’ SOUP

GALLEY CREAM OF ‘WHATEVER’ SOUP

Hi there my Galley folks. Are you still isolating these days or has life begun to open up for you?  I’m still practicing my distancing. I still haven’t stepped into a store since early March and have not minded it at all.  A lot of people are finding it difficult but this time away from ‘normal’ has made me more reflective and I’m using it as a reset point. Time to slow down the busy. Make life simple again. I’ve…

GALLEY KAT IRISH CREAM

GALLEY KAT IRISH CREAM

I’ve been a very very bad Kat!  Having an addictive personallity means there are some things I just don’t keep on hand. Sea Salt and Black Pepper Chips for one.  Another, which I refuse to buy any more is Irish Cream Liqueur.  I won’t mention any particular brand.  They are all the same and all evil.  Just thinking about them makes my belly ache…they are that rich, and that good! We have been invited to a Saint Patrick’s Day celebration…

JIFFY CORNBREAD CLONE MIX

JIFFY CORNBREAD CLONE MIX

I’m not much for commercially prepared mixes but I do love the convenience of them. Part of my provisioning strategy is to prepare dry packets of our favourite ‘mixes’ so I can just add the liquids. Sometimes to save washing up, I even add the wet ingredients right in the bag. JIFFY CORNBREAD CLONE MIX 1 cup corn meal 1/2 cup all purpose flour 2 tbsp sugar 1 tsp sea salt 1 tbsp baking powder 1/2 tsp baking soda When…

DIY ‘VELVEETA’ CHEESE

DIY ‘VELVEETA’ CHEESE

DIY ‘VELVEETA’ CHEESE 6 tbsp powdered milk 1 packet unflavoured gelatin 1 cup boiling water 1/8 tsp cream of tartar 16 oz shredded cheese (about 4 cups) (I shredded a block aged cheddar but packages of already shredded cheese would be a time saver) Line a rectangular container with plastic wrap (I used little silicone baking dishes – smaller footprint for my little cooler) Combine powdered milk and gelatin in a bowl. Add boiling water and using an…

EASY HOLLANDAISE

EASY HOLLANDAISE

I know that keeping packaged Hollandaise mixes onboard is an easy quick fix but the real thing is just as easy and quick and tastes SO much better… All you need is the following: 2 egg yolks 1/2 tbsp fresh lemon juice 1/4 cup butter , melted pinch of cayenne dash of sea salt Method: In metal bowl whisk yolks & lemon juice together until thick and creamy (about 3 minutes) Place bowl over simmering water (be careful bowl doesn’t…

HOMEMADE KETCHUP

HOMEMADE KETCHUP

This is another example of trying to make healthier choices. We don’t use ketchup often but when we do it’s good to have a bit more control over the amount of added salt and sugar… Homemade Ketchup 1 6-ounce can tomato paste 1/4 cup agave syrup 1/2 cup white vinegar 1/4 cup water 1 tablespoon sugar 1 teaspoon salt 1/4 teaspoon onion powder 1/8 teaspoon garlic powder   Combine all ingredients in a medium saucepan over medium heat. Whisk until…
