SPANAKOPITA BOMBS

SPANAKOPITA BOMBS

Hello there my Galley Peeps. I’m back to my regular weekly routine with one more recipe to add to your Galley Kat Bomb-making series.  Very similar to my SPANAKOPITA GRILLED CHEESE but in this form…tangy flavourful filling wrapped in an easy to make dough…it’s more portable.  Reducing the size as I did with the BREAKFAST BOMBS you have an on-the-go little hand pie. These are perfect for brunch, boxed lunches, picnics or a little game day appetizer…especially when paired with some…

CHILLED RHUBARB STRAWBERRY SOUP

CHILLED RHUBARB STRAWBERRY SOUP

What do cucumbers, strawberries and rhubarb have in common?  Yes, two of them are vegetables smarty pants.  But when the three of them meet together with a touch of chocolate balsamic vinegar they become the makings of a very memorable fresh summery soup. This time of year we still depend on imported strawberries which tend to be large and watery and since chilling mutes flavours you may want to add a touch more salt, a dash more of balsamic vinegar…

ROAD TRIP

ROAD TRIP

The end of our thirty day Whole30 quest is not the end of our Whole30 quest. Each eliminated food group has to be re-introduced one by one. At the time of this road trip we have added non-grain alcohol/wine back into the mix….obviously not to be included in our road trip menu. We did however toast our success on Day 30 +1 with a very fine potato vodka….just a splash…not shaken…not stirred. We are allowed lentils though. What can I do with…

NATIONAL SANDWICH DAY 2015

It’s National Sandwich Day my Galley Peeps and I’m here to offer you a little inspiration… Caprese Sandwich Wrap (your fave salad all wrapped up in a torilla) Cranberry Chickpea Salad Sandwich (so good served with a warming soup) Rueben Sandwich (lots of boat galley attitude here)     Breakfast Burritos (sandwiches made ahead and served for breakfast) Chicken Avocado Grilled Cheese (just looking at that picture makes me want at least two) Waffled Grilled Cheese (really basic but so…

Of BABY BUBBLES and AVOCADO TOAST

Of BABY BUBBLES and AVOCADO TOAST

This post isn’t so much about the recipe but more about the occasion. …the occasion of my daughter and grandson’s visit. So many adjectives describe this bubble blowing bundle of cuteness but the pictures will speak for themselves. So many adjectives describe my daughter: at the very least, confident, health conscious and organized. She was happy to take over meal prep and I was more than happy to let her. Our leisurely morning meal consisted of her version of Avocado…

MAKE AHEAD SALAD

MAKE AHEAD SALAD

Recently I came across an interesting blog post from one of my faves Shutterbean She really spoke to the always-oraganized-person-I-wish-I-were-but-never-quite-get-there. What I did take away from the gist of the article was her way of eating more salads. Onboard our boat fresh greens aren’t always available and when we do get a chance to provision veggies the greens are the most fragile to store properly. I routinely sprout to supplement our stock (link to my sprouting antics) but I thought…

CHICKEN AVOCADO GRILLED CHEESE

CHICKEN AVOCADO GRILLED CHEESE

Me again proselytizing about ‘cooking once eating many times’. Last time we conversed it was all about making lots of chick peas in your pressure cooker. …Same tack…different ingredient: Chicken or whatever meat turns your winch, grilled one night with enough leftovers that can be used for so many other delicious meal for the following few days. (4 chicken breasts = 1 main meal for 2 hungry sailors + enough shredded meat for 2 more meals) Today I’m in a…

CHICKEN PITA SANDWICH with CUCUMBER TOMATO CHICKPEA SALAD

CHICKEN PITA SANDWICH with CUCUMBER TOMATO CHICKPEA SALAD

Most of my more recent recipes have been in the ‘comfort food’ category, but I guess in fairness to our current -42 ° C winter conditons, who could blame me. But those freshly made stove top pitas are calling to me. I’m thinking leftover grilled chicken sandwich with a fresh salad. Cucumber Tomato Chick Pea Salad 1 cup chopped tomatoes (a variety of types & colours) 1 English cucumber chopped 1 can chickpeas 2 Tablespoons finely chopped red onion 1/2…
