CHICKEN AVOCADO GRILLED CHEESE

Me again proselytizing about ‘cooking once eating many times’.

Last time we conversed

it was all about making lots of chick peas in your pressure cooker.

…Same tack…different ingredient:

Chicken or whatever meat turns your winch,

grilled one night

with enough leftovers that can be used

for so many other delicious meal for the following few days.

(4 chicken breasts = 1 main meal for 2 hungry sailors + enough shredded meat for 2 more meals)

Today I’m in a boat picnic frame of mind…

(Captain and I now have 4 little boat modification projects

that we have been working on,

one of which requires at least 1 day of +4 ° C.

We have a small weather window of opportunity so

heading to the boat with our essentials:

…Galley Kat picnic

…Captain’s working beer.

…and of course tools…

 

CHICKEN AVOCADO GRILLED CHEESE

4 slices of your favourite bread

2 slices provolone

2 slices havarti

2 cups shredded or chopped grilled chicken

1 avocado

lime juice

cilantro or parsley

dried chilis

roasted red peppers

mayonnaise

Assemble you ingredients and heat your grill.

Paint one side of each bread slice with mayonnaise.

(this will be your grilled side)

Smash avocado and mix with lime juice, cliantro and a pinch of chilis.

Turn bread over.

Top 2 slices with provolone cheese,

then chicken pieces,

then pieces of roasted red pepper.

 

Spread half the avocado mixture on each of the two bread slices.
Top with havarti cheese slices, then remaining two bread slices.
(remember the mayo is on the outside for grilling)

Grill each side until all golden and melty.

Serve with your fave warming soup.
