BULGAR SPINACH CHEESE BURGERS

There are so many great recipes out there for delicious vegetarian meals
that I can’t remember the last time I actually cooked a meal with meat…
fish, yes
but no animal has been sacrificed in my galley for ages.
Captain hasn’t complained either,
although he doesn’t complain, ever.
He once told me that if someone goes to the trouble of preparing a meal for him,
he should be appreciative of the effort…
And really Galley Peeps,
between you and me,
I think he is a very lucky recipient of some pretty yummy meals

BULGAR SPINACH CHEESE BURGERS
2 cups cooked Bulgar
1 small onion chopped
3 cloves garlic, crushed
1/2 cup steamed spinach, as much of water expressed out as possible
1/2 cup grated cheese (I used gouda)
3 eggs
1/4 cup chopped fresh basil leaves (or 1/2 tsp dried basil)
1/2 tsp sea salt
1 tsp ground pepper
1/2 tsp dried chilis (optional)
1/2 cup panko crumbs
oil for cooking
Mix all ingredients except oil together
Form into 6 equal sized balls.
Heat oil in pan, just enough to cook your six burgers
Place bulgar balls in pan and flatten with your spatula.
Cook on each side until well browned.
Enjoy with a crisp salad.

For a great appetizer course form into several smaller portions,
about 2″ when flattened

and serve warm with a dab of Basil Aoli
