SIMPLE PEACH BREAD PUDDING

SIMPLE PEACH BREAD PUDDING

There’s nothing more satisfying than a rich, creamy, custardy bread pudding.  It’s like having dessert for breakfast. This was a product of using up some galley supplies.  The last of my farm eggs from happy chickens, some opened canned milk, aging whole grain bread (hard to believe this one slipped by my bread-lovin’ man) and canned peaches (yes, I know fresh are in season but I’m trying to use up some provisions so I can dive into enjoying ‘real’ peaches….

MAPLE PINEAPPLE GLAZED MAHI MAHI

MAPLE PINEAPPLE GLAZED MAHI MAHI

Sadly this recipe uses the last morsel from our recent Rhode trip gifts.  Going to have to learn to gather our own treasures from the sea from now on. The beauty of these types of dinners is the ease in cooking.  Most fish takes just a few minutes from prep to table.  This was no exception, although I let the filet marinate…

Then there are those days when we like to laze around, when around the crack of noon breakfast has turned into brunch. While Captain is up on deck with his second cup of coffee, wiping off the morning dew or…

‘BAKED’ PUMPKIN FRENCH TOAST

‘BAKED’ PUMPKIN FRENCH TOAST

When we’re not in a hurry and want a more substantial start to our day, I put in a bit more effort to breakfast than a quick bowl of cereal and yogurt. This was one of those days and wow, it was worth the little extra effort. Not only did we enjoy the results (warm custard-y pumpkin toast mixture) but it warmed up the cabin and imparted a wonderful spicy fragrance thoughout. I halved the original recipe to fit nicely…
