MEDITERRANEAN BAKED FISH

MEDITERRANEAN BAKED FISH

Good day to you all my Galley Friends.  I hope you are all well and ready for another treat from my little kitchen.  I must admit, that I really have been missing our dear sail boat, and when meal time rolls around I especially miss my very compact but efficient galley. Cooking minimally has become so engrained, that even with more conventional appliances, I still prefer my boat things. Because on the boat I had just one burner to cook…

STUFFED BAKED HADDOCK

STUFFED BAKED HADDOCK

I have a simple dinner for you today my Galley Peeps. Delicate white fish, some salad crab and buttery crackers crumbs, cooked to perfection in barely 20 minutes. The preparation was super simple too. Fish in pan, a couple of grinds of salt and pepper.  Crumbs, melted butter, seasonings all mixed with crab meat. Sprinkled generously over the fish. Baked. Could it be any easier? The delicate flakey texture of the fish combined with the crispy buttery crabby topping and…

MARY’S BAKED FRUIT PUDDING

MARY’S BAKED FRUIT PUDDING

Hi there my Galley Peeps. Glad you stopped by today because, as promised, I have something for you to use up some of that leftover cake from my last post (Galley Cake Mix) I still laugh when writing that there is such a thing as leftover cake but here you go… One of my Peeps sent in this recipe quite a while ago and I thought it galley worthy. Simple in preparation.  Simple in ingredients. Yummy to eat. And a…

CAPRESE CUPS

CAPRESE CUPS

I’ve been trying out some recipes for an upcoming guest visit and wanted to prepare something yummy for breakfast or brunch.  And foremost, something easy.  I don’t want to be spending my time with them cooking all day.  I like make ahead dishes but we don’t have a whole lot of room to stash pre-made meals. This recipe fits perfectly.  I can make it fresh with little effort with ingredients that I can have on hand.  Some cheese, tomatoes and…

BANANA OAT MUFFINS

BANANA OAT MUFFINS

I’ve been trying to become better organized in the galley these days.  It’s far too easy for me to get side tracked by yet another tasty something or other to try out.  It’s why for a brief time I subscribed to home delivery meals…all nicely packaged with just enough for the two of us…no leftovers…so extra bits and pieces to be stored in the refrigerator either waiting to be used for another recipe or walking itself into the garbage at…

SAVOURY BAKED NOODLES (KUGEL)

SAVOURY BAKED NOODLES (KUGEL)

I love kugel, especially the savoury kind.  Well, in truth I love anything with pasta and cheese.  It’s the ultimate comfort food especially welcomed now that we are heading into some chilly days.  I call it my hibernation food. This next recipe was made to be a complete meal with spinach and mushrooms and lots of dairy for protein.  I baked it no-oven-galley-style in my stove top Omnia but for you land folks it easily transforms to a more traditional…

STOVE TOP BAKED APPLES

STOVE TOP BAKED APPLES

I love all my galley gear, especially my little Omnia stove top oven.  Even though our boat is out of the water for this season, I still use it in our land galley.  And because of our recent packin-up-and-movin-out, it’s been the one appliance I haven’t packed.  Our land oven was scrubbedd clean for the future owner so it became a no cook zone before moving out of our condo (catch up with that story here) With apples in season,…

FRESH TOMATO, ZUCCHINI and HALLOUMI BAKE

FRESH TOMATO, ZUCCHINI and HALLOUMI BAKE

Here I am with another yummy fresh tomato recipe.  This time I baked them topped with Halloumi cheese in my little Omnia stove top oven. I suppose I could have made it a one pot wonder but tonight I was feeling cavalier and used a saucepan to simmer the tomato mixture.  Two pots to clean up – oh what a reckless Galley Kat I am! My galley cookware takes so little cleaning up that it was worth using. Once the…

CAPTAIN COOKS: BAKED HALIBUT in LEMON CREAM SAUCE

CAPTAIN COOKS: BAKED HALIBUT in LEMON CREAM SAUCE

He’s on a roll.  Second Captain Cooks in less than a week (his last creation here).  This time he made us an incredibly delicious fish dish in my daughter’s kitchen as we are currently homeless and at the time we hadn’t yet found a home for our boat. It is super easy to prepare.  Just season the fish well… Prepare the sauce and let it spend a few minutes  in the oven. Now that we are back on the water,…

BAKED GREEK SHRIMP with TOMATOES and FETA

BAKED GREEK SHRIMP with TOMATOES and FETA

Now that the weather is improving…slowly…but any improvement is welcomed… I’m beginning to make plans for summer boat life.  This means easy quick meals, prepared with simple fresh ingredients. Tonight’s meal was one of those winners…so much so that although I made enough for two servings we both wished we could have gone back for seconds. Onions and lots of garlic sent wafts of intoxicating aromas through my land galley.  Fresh tomatoes and lots of parsley topped off the base…
