GALLEY CAKE MIX

GALLEY CAKE MIX

Continuing on with simplifying my life in the kitchen/galley, I have a super fun recipe for you this week. Those who have been following along for a while, know how much I dislike commercial preparations, preferring instead to make my own whenever possible and practical. Growing up in a small farming community with a father who always preached ‘the closer to nature, the better’ and in a time when convenience foods were just becoming popular, we ate mostly locally grown…

JUDITH’S AUSSIE BITES (with product review)

JUDITH’S AUSSIE BITES (with product review)

This feels like a celebration and I have been saving today’s post for just this special occasion.  Omnia…you know those genius stove top oven folks?…well, they sent me one of their new products to try out.  The Muffin Ring…I’ve just finished using it for the first time and I absolutely LOVE it! The design is really very smart.  Silicone construction, which makes clean up a breeze, and the six muffin wells collapse which allow for easy storage inside the baking…

BISCUIT MUFFIN ROLLS

BISCUIT MUFFIN ROLLS

What, you ask? Are they biscuits or are they rolls or are they muffins?  Well in truth they have a bit of an identity crisis.  They have a texture similar to dinner rolls but they have no yeast in them….and they are made in a muffin tin.  So I named them Biscuit Muffin Rolls. One bowl, one spoon, eight little muffin cups makes for a super easy clean-up too. Don’t you think? I played around with the ingredients, keeping the…

RHUBARB MUFFINS

RHUBARB MUFFINS

Since the overwhleming success of the Rhubarb Cocktail (find the recipe here.  If you haven’t already tried it…you MUST), I’ve been in love with the rhubarb/lime/ginger combo.  So I took one of my favourite Galley Kat muffin recipes Lemon Ginger Muffins (recipe here) and transformed it into the ideal tea-time treat.  The perfect combination of tart rhubarb, a hint of lime and the bite of ginger.   This recipe works equally well for the Omnia stove top oven as it does…

CRANBERRY LIME MUFFINS

CRANBERRY LIME MUFFINS

So why am I still baking in a stove top oven when I have a perfectly good land galley oven to use you might ask?  I don’t honestly know, except that it’s so darned easy.  It doesn’t take any longer than a conventional oven.  Clean up is about the same amount of effort and I love the economy of not heating an entire appliance for a dozen little muffins. I guess it might still seem strange to you house bound ‘dirt…

EASTER TRIFLE

EASTER TRIFLE

Easter dessert this year started with a feed of muffins…all lemony and gingery.  Not too sweet.  Just right. (Recipe here)   Cut into little chunks they made the base for our sweet treat.  And the great thing about this dessert was that each component could be enjoyed separately.  A little muffin with our morning coffee for example. The crème anglaise, made with Bird’s Custard Powder is also great on its own, or with some fresh fruits added. Sweet morsels of…

POTATO LATKE MUFFINS

POTATO LATKE MUFFINS

I was so pleased with the results of my little potato stacks (recipe here), that I decided to try another potato side dish.  Potato Latkes are one of my all time favourites, especially smothered in rich sour cream or plain Greek yogurt.  Years ago while watching the kids’ show Mr. Dress-up (anyone remember him?) with my son, he showed how to make these really easy potato latkes.  I’ve been in love with them ever since.  So when I stumbled onto…

BANANA BREAD MUFFINS with MAPLE BACON COMPOUND BUTTER

BANANA BREAD MUFFINS with MAPLE BACON COMPOUND BUTTER

Keeping simple galley methods in mind I transformed my favourite banana bread recipe into individual muffins baked in my Omnia Stove Top Oven.  A dozen perfect little hand treats resulted.  What made them even better was the addition of Maple Bacon Butter smeared over their already rich moist warm surface.  Sadly they never last very long once Captain gets wind of their existence but they are so easy to make that once I have another ripe banana or two…

BLACKBERRY LEMON ‘MUFFIN’ CAKE

BLACKBERRY LEMON ‘MUFFIN’ CAKE

No oven…no problem… not when I have my stove top Omnia Oven onboard… Had a hunger for a little something sweet for breakfast this morning… …a little something sweet with some aged cheddar… …not too sweet though, and look at all those yummy blackberries… BLACKBERRY LEMON ‘MUFFIN’ CAKE (‘muffin’ because this is my muffin recipe of course) You can half the recipe to make 12 muffins 3 cups all-purpose flour 1 teaspoon salt 4 teaspoons baking powder 1 cup…
