GRILLED STEAK w/ LEMON BUTTER, SALTED BAKED POTATO & ROASTED GARLIC

This whole meal was surprisingly simple and so delicious.
…surprising because it could have been prepared in the most modest of galleys…
Beginning with the ‘baked’ potatoes
keep in mind there is no traditional oven in my little galley, or no microwave…
…just a little one-burner alcohol stove
and one Omnia Oven
Salted Baked Potatoes
Scrub and half 2 medium sized potatoes
Pour a small amount of EVO into a saucer and rub potato generously with the oil
Cover the oiled potato liberally with sea salt on all sides
Line Omnia Oven with foil
and place potatoes inside
Roasted Garlic
Cut top off 2 garlic bulbs
place in a square of foil and sprinkle with olive oil, salt & pepper
wrap loosely and place in Omnia pan with potatoes
Place Omnia base on stove element on high for 5 minutes.
Place covered Omnia on base plate and reduce heat to medium for approximately 45 minutes.
Lemon Butter
In the meantime
caramelize 1 small chopped shallot in 1 tsp olive oil.
When golden brown, mix together with
1/4 cup softened butter
juice & zest of 1/4 lemon
a healthy dash of Worcestershire sauce
1 tbsp each fresh chopped thyme & rosemary
Grilled Filet of Beef
(2 of approximately 1″ thickness each)
freshly ground pepper
dry mustard
Worcestershire sauce
Rub the above into all sides of filet then coat with EVO
Heat grill on high for five minutes
Place filets on grill.
After 2 minutes turn steaks 90 ° and grill for 2 more minutes
Flip and grill for 2 more minutes
turn 90 ° and continue for a final 2 minutes.
Remove from grill and let steak stand tented with foil
for a couple of minutes to let the meat ‘relax’.
Serve with steamed or grilled vegetables,
salted potatoes, roasted garlic,
lemon butter
