Today this post is brought to you by a guest in my Galley.
My son, Luke, is visiting us for the week. He loves to help and is always onboard with offering his assistance whenever needed.
This time he donned his fave apron to whip up a batch of some very tasty muffins.
They were super simple – all the dry stuff, all the wet stuff, and some canned peaches.
All made in our little Omnia stove top oven
what you will need
2 cups flour
3/4 cups sugar
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1 cup plain Greek yogurt
1/4 cup milk
1/4 cup + 2 tbsp melted coconut oil
1 tsp vanilla
1-1/2 cups chopped canned peaches
time to mix it up
Prepare muffins tin (I used medium silicone cups)
In large bowl mix all dry ingredients together.
In a small bowl whisk together wet ingredients.
Dump wet ingredients into dry and fold together.
Careful not to over mix.
Fold in peaches.
Spoon into prepared muffin cups or tin.
Bake in conventional 350 ° oven for about 20 minutes or in preheated Omnia stove top with burner set on medium low for same amount of time.
