
TOMATO SOUP
Tomato soup is the ‘little black dress of soups’.
Dressed up or unadorned
it is the perfect elegant cold weather entrée
or served with it’s mate - the grilled cheese
Simple Tomato Soup
1tbsp each olive oil & butter
3 small onions, chopped
2 garlic cloves, minced
2 tbsp flour
1-28oz tin crushed tomatoes
3 cups chicken or vegetable stock
fresh herbs (I used thyme & basil)
salt & pepper
Sauté onions and garlic until transparent & fragrant.
Add flour and stir until slightly thickened and flour is ‘cooked’.
Add herbs, salt & pepper and tomatoes mixing well with flour, onions and garlic.
Gradually add stock and simmer for 20 minutes.
If you have a blender or processor onboard
puree in batches until creamy.
Serve and enjoy!
