GRILLED ASPARAGUS w/ MISO BUTTER

Spring has sprung and the markets are filled with spring veggies…
Have to take advantage of them while they last…
 
GRILLED ASPARAGUS w/ MISO BUTTER
 
inspired by the Tart Tart
asparagus
olive oil
2 parts butter
1 part miso
eggs
toast
…toss asparagus in a bit of olive oil…
…lightly salt and pepper…
…grill until edges are lightly browned…
Now for the eggs…
…my favourite way of poaching eggs…
crack egg into a fine mesh strainer
(this way there won’t be the white clouds of egg white in the simmering water and the result will be a well formed cooked egg)
Genlty tip egg into pan of simmering water.
Place lid on pan and let the egg steam until the yolk is just barely runny and the white has set…
Combine butter and miso and place 1 or 2 tbsp onto serving plate.
Top with grilled asparagus and poached eggs.
Give it a good grind of pepper.
Because the miso is salty I would caution against salting the egg.
Serve with some toast.
Because the bread monster consumed all of my beautful baguettes, I had to make more.
It was worth the little effort and the toasted slices were a perfect compliment to this easy meal.
