I found this recipe using squash the other day
and thought it looked like a healthy seasonal side dish…
…it required just a few ingredients,
ones that could easily be stored onboard,
apples, squash, nuts
and what boat doesn’t have a good supply of bacon…
The original recipe required oven and stove top
so in keeping my simple galley focus
I turned it into a one-pan-dish…
Butternit Squash & Apple Hash
2 cups diced butternut squash, peeled and diced
1 large apple, diced
4-5 strips bacon cut into 1″ pieces
1/4 cup or more chopped green onions
sea salt & pepper to taste
1/4 cup pecans
In heavy pan cook bacon until crispy.
Remove bacon from pan keeping bacon grease.
Add diced squash to hot pan and cook
until pieces are nicely browned.
Add apples and continue to cook until squash and apples
are cooked but not too soft
Add bacon, onions, and nuts
Season with sea salt & pepper
Stir until all is heated.
