VEGAN PANNA COTTA
I made this dessert the other night for a dinner party…
Panna Cotta with Blood Oranges in Grand Marnier Caramel Sauce…
(let me know if you would like this recipe.
It isn’t vegan but it is SO good.)
It is really easy to make and takes so little time.
Would I go to the bother of making the caramel sauce on the boat?
…possibly.
Would I likely keep a good supply of heavy cream onboard?
…possibly.
I tried several ways and finally came up with a very satifactory version
using coconut milk (something I always have on hand)
 
VEGAN PANNA COTTA
1-13oz can coconut milk
1 packet gelatin
1/4 cup maple syrup
1 tsp vanilla extract
Whisk gelatin & coconut milk together in small saucepan
and let sit for 5 minutes.
Gently heat until gelatin is completely dissolved but don’t boil.
Stir in maple syrup and vanilla.
Refrigerate until completely set (about 4 hours)
Once the base recipe is made there are so many possibilities.
Creative juices flowing here…
so many possibilities…
Panna Cotta with Mandarin Oranges and a drizzle of Blood Orange Vinegar…
