TOFETA

Is this even a word?
Tofu > Feta = TOFETA
We aren’t vegans or even vegetarians.
But I will quite often insert a tasty meal without meat or fish.
And from time to time I create a winner without meat or eggs or dairy.
 
 
Veganism does intrigue me though…
Life without meat or fish? – maybe…
Life without eggs? – perhaps…
Life without cheese? – have you met my French cheese-loving husband?
But this Galley Kat is always up for a challenge…
I fooled him with my Vegan Chili (see link)
He LOVED my spicy Asian Beef on rice (see link)
Let’s see how he reacts to my latest recipe ‘hack’
 
 
 
TOFETA
12 oz package of extra firm tofu
1/4 cup olive oil
1/4 cup water
1/2 cup vinegar (I used 1/4 apple cider & 1/4 cup white)
4 tsp sea salt
1 tbsp dried oregano
1 tsp dried basil
1/2 tsp pepper
Crumble or cube feta and stir in the rest of the ingredients.
Let sit for minimum 1 hour.
…crumbled,the texture is only slighty different from feta,
but the best part is I can control the saltiness.
Four teaspoons for us seemed just right.
…Super tasty in a Greek salad…
…with some fresh pita…
…it pairs especially well with fresh fruit
(my favourite is watermelon – a little sweet with a little salty)
