When fresh basil isn’t available why not try spinach?… SPINACH PESTO 5 oz package of baby spinach 1/4 cup pine nuts 2-3 garlic cloves 1/4 cup grated Parmesan 2-3 tbsp olive oil Place all in your blender and whirl away until you have a smooth consistency.
