ROASTED CORN CHEESE DIP

ROASTED CORN CHEESE DIP

I so do miss our happy hours.  It seems that lately one day melts into the next and half the time the only sure reference of date we have is what month it is….as the conversation goes: what day is it?  I don’t know but I think it’s still September.  Our big move is coming up soon (a reference to our craziness on my other blog here if you are interested) so most days are consumed with making lists and…

ROAD TRIP

ROAD TRIP

The end of our thirty day Whole30 quest is not the end of our Whole30 quest. Each eliminated food group has to be re-introduced one by one. At the time of this road trip we have added non-grain alcohol/wine back into the mix….obviously not to be included in our road trip menu. We did however toast our success on Day 30 +1 with a very fine potato vodka….just a splash…not shaken…not stirred. We are allowed lentils though. What can I do with…

WAFFLED PIZZAS

WAFFLED PIZZAS

Out first of the season onboard meal …and my first try out of the new galley stove. While we are on shore power it functions as a traditional stove with an element. While underway or at anchor, it can be used as a typical alcohol burning stove. I brought all the necessary ingredients onboard for a little pizza feast thinking it would be a real occasion to create something to share with my Galley Peeps. It’s an idea I came…

FIREY ROASTED CHICK PEAS

FIREY ROASTED CHICK PEAS

Chick peas are a staple onboard R.E.D. I kept several cans with us last year and used them in salads and stir-fries. Easy and healthy. For this next one why not break out your pressure cooker and within 40 – 45 minutes you can have a good quantity at a fraction of the cost of canned.     FIREY ROASTED CHICK PEAS 2-3 cups cooked chick peas 1 tbsp olive oil 1 tbsp smoke paprika 1 tsp garlic powder 1…

QUINOA BITES

Over the holidays Francois’ daughter served these yummy little morsels for a pre-dinner treat. SPINACH BITES

SPINACH BITES

These little spinach morsels are great for a little happy hour treat or a small pick-up snack any time of day. Kids will love these too (a great way to inject some greens into their diet) SPINACH BITES 1 package of fresh spinach, finely chopped 2 green onions, minced 3 eggs, beaten 1 cup panko crumbs 1 garlic clove, minced 1/4 cup melted butter 1/2 cup grated cheese (to your taste, I used a mixture of parmesan and aged cheddar)…

COFFEE TO GO

COFFEE TO GO

Well, didn’t I stumble upon this next recipe the other day and thought, …’woo, coffee on the go’? …’an extra kick of energy on the run’? So I got busy this morning while consuming my second cup of coffee… …blended up all the ingredients, poured into my two little pans.   …20 minutes later. Now I’m ready for a high octane day!    COFFEE GUMMIES 1 cup freshly brewed coffee 1 tbsp salt-free butter (I didn’t have grass-fed which would…

ENERGY BARS

ENERGY BARS

This is a very easy recipe to make and have on hand for on-the-go snacks and especially for a quick energy fix. No added sugar but these little morsels of deliciousness are really sweet. Galley Kat recommends doubling the recipe – they are that good!   GALLEY KAT ENERGY BARS 1/2 cup pitted dates 1/2 cup dried cherries 1/2 cup dried blueberries 1 cup raw almonds   Soak dried fruit in warm water for about 30 minutes to soften. Process…
