SCURVY AWARENESS DAY – GOSLING’S SIDECAR

SCURVY AWARENESS DAY – GOSLING’S SIDECAR

” A lemon a day…and rum…keeps the scurvy at bay” This is a day to be aware of scurvy, the disease that afflicted many a sailor  on long voyages pre-18th century because of poor diet and Vitamin C deficiencies. So this 2nd day of May 2016, we, the good respectful sailors that we are, remember those poor souls  by adding a dose of lemon to our tot of rum. GOSLING’S SIDECAR what you will need for 2 servings 1 tsp…

BOOZIE COCONUT HOT CHOCOLATE

BOOZIE COCONUT HOT CHOCOLATE

It’s that time of year Galley Peeps, as least for those of us above the frost line, when winds blow, and snow arrives and wintery evenings drive us indoors to share a comforting grog or two with friends. I tried this next recipe several ways – with milk, with evaporated milk… both were very nice by the way, but my taste tester’s fave was made with full fat coconut milk especially when a wee dram of rum was added, It’s…

PINEAPPLE CREAM CHEESE BREAD PUDDING

PINEAPPLE CREAM CHEESE BREAD PUDDING

On good sailing days, breakfast onboard R.E.D. is usually really simple. Getting an early start to catch the best wind is the priority, so quick and dirty – eat, wash up and untie the lines is the way we go. Then there are those days when we like to laze around, when around the crack of noon breakfast has turned into brunch. While Captain is up on deck with his second cup of coffee, wiping off the morning dew or…

PIRATE STEAK with COMPOUND BUTTER

PIRATE STEAK with COMPOUND BUTTER

ARRRR… Tonight we are grilling steak… pirate steak… sweet and sassy pirate steak… I normally don’t like anyone messing with my steak.. like my scotch…straight up with a splash of water… and with the steak… only a bit of salt and pepper. Since expanding our meat grilling experiences (see brining the chicken and the pork chops) I thought I would try a simple marinade… Rum and molasses with a feisty dash of chillis. The result was a crispy caramelized coating…
