PORK RAGU on CREAMY POLENTA

PORK RAGU on CREAMY POLENTA

Hearty belly-warming stews are a welcome meal after a chilly day out and about, Hiking, camping or on the water, there’s nothing like that rich thick flavour. What’s even better is not having to spend the hour or three cooking time that is usual to capture that rich Ragu flavour. Soooo…. I tried a little something new…. a Ragu made with pork tenderloin instead of a cut that requires more cooking time, and no fat or waste. …then to cut…

BAY SCALLOPS & MUSHROOMS on CREAMY LEMON POLENTA

BAY SCALLOPS & MUSHROOMS on CREAMY LEMON POLENTA

There really isn’t any recipe for this one but I had a hunger for scallops… Here’s what I used (quantites are variable)   For the Crumb Topping 1 cup Panko 2-3 tbsp chopped parsley 2 tbsp olive oil I like keeping this on hand in an air tight container. Since we don’t have an oven onboard it’s great to sprinkle on a stove top casserole so I can pretend it all just came out of the oven all crispy. Toss…

Cook once – eat twice I sliced the remaining bits of polenta, heated some compound butter in the pan, fried until crispy brown on both sides. Served with a drizzle of maple syrup… The perfect combination of savoury with a hint of sweet.
