EASY FISH TOSTADAS

EASY FISH TOSTADAS

I’ve been trying to come up with ideas for easy meals that can be made with what we have on hand in the galley. Sort of like tossing my Foodie Dice. It’s a fun way to plan meals and is certainly a creative exercise. From time to time I toss my dice (read all about ‘playing with my food’ here) and from time to time I just wing it. Today I winged it..wung it…(whatever the past tense of the verb…

MEXICAN FONDU

MEXICAN FONDU

One of our last suppers on the water for this season, served in my all time favourite manner… finger food with accompanying beverage of choice… AKA !Happy Hour! I made sure it was relatively nutritionally balanced (protein, carbs and vegetables)… Ingredients easily available… Minimal cooking… And so very fun to make…and enjoy… MEXICAN FONDU (at least 4 very generous servings) 1 lb extra lean ground beef (I’ve also used ground turkey and spicy sausage) 8 oz cream cheese 1 large…

HOMEMADE REFRIED BEANS

HOMEMADE REFRIED BEANS

I’m all about convenience, especially when it comes to cooking in my tiny kitchen/galley. But economy also plays a very important role, economy of effort balanced with cost. This is where my little pressure cooker comes into play. It would have been faster to just open a can of beans for this next recipe, but with a bit of fore-planning, I can pop in some dried beans with water and any seasonings I wish and 45 minutes later I have…

PERFECTLY EASY QUESO

PERFECTLY EASY QUESO

I’ve found out through trial and error that the road to the perfectly easy queso is paved not with a good quality cheese but with good old cheese slices. I can hear the critics now!… Eeeuw! …cheese slices? …AKA plastic cheese? …with a list of ingredients longer than my arm? By perfect I mean smooth, creamy, velvety, drippy queso. And another advantage of cheese slices onboard our boat is that until opened they don’t need refrigeration. (sad but disturbingly true…

CORNED BEEF TACOS with GUINNESS DIPPING SAUCE

CORNED BEEF TACOS with GUINNESS DIPPING SAUCE

How about a little Mexican Irish Fusion?… Tacos and Corned Beef?… …with a little Guinnes Dipping Sauce on the side? “Pourquoi pas?!” I say with my best French accent. …an interesting way to use up some of that corned beef from yesterday’s Saint Patrick’s Day Corned Beef and Cabbage feast… Have I peeked your interest? Well just take a look at this following recipe… It may seem like a strange combination of ingredients, and I must admit I was sceptical…

BLACK BEAN CHILI

BLACK BEAN CHILI

Here is another Costa Rican inspired dish that offers lots of flavour.. super easy to make… versatile… and healthy… Instead of the typical black beans and rice I subbed the rice for red quinoa for a little added protein.       BLACK BEAN CHILI a few swirls of cooking oil 1 small onion, chopped 2-3 cloves garlic, minced 2 jalapeños, minced 1 sweet red pepper, seeded and chopped 1 sweet potato, peeled and chopped (about 1″ pieces) 1-14 oz…

GREEK QUESADILLAS with TSATZIKI

GREEK QUESADILLAS with TSATZIKI

How about a little Mexican-Greek fusion for supper tonight? Here is something I brought onboard this summer that I didn’t use…. Canned spinach is kind of gross (in my humble opinion). ….but when I was provisioning this summer, I thought that it might come in handy should we have nothing leafy green or veggie and couldn’t or didn’t want to tramp through a little village to find something fresh. As it turns out, it’s pretty darn good… in this recipe…
