PRESSURE COOKER ‘ROAST’ CHICKEN and BONE BROTH with bonus EASY GRAVY MIX

PRESSURE COOKER ‘ROAST’ CHICKEN and BONE BROTH with bonus EASY GRAVY MIX

I have a super easy and quick two for one recipe post for you today, my Galley Peeps.  In truth it’s actually three because I added my recipe for gravy mix which comes in handy if you don’t have real chicken stock on hand.  Now that we are off-season country dwellers, I have become very conscious of supporting local enterprises.  My latest find is ordering vegetables and meats every two weeks from a nearby farm.    They send a list…

GINGER POACHED EGG SOUP

GINGER POACHED EGG SOUP

Today’s recipe qualifies as an easy meatless meal. Lots of garlic, broth and ginger for the base. Eggs and bok choy filled in the rest to give us a well-rounded nutritious supper.   I used vegetable broth but chicken or beef broth would add extra dimension.  I’ve also used a spoonful or two of miso paste in the past for that added immunity-probiotic boost. Loosen the miso with a bit of broth or water then stir in at the end…

CAPTAIN COOKS – WHITE BEAN and HAM SOUP

CAPTAIN COOKS – WHITE BEAN and HAM SOUP

Today I was allowed in for a brief period to bake some boat bread but then I had to retreat. I was allowed to take photos but that was it. He even made our preparing-dinner-cocktails (now that would be a great future post! – Captain’s Cocktails) WHITE BEAN and HAM SOUP Serves 8 2 cans of 19 oz white…

ONE POT CHICKEN PASTA CASSEROLE

ONE POT CHICKEN PASTA CASSEROLE

We took the barbecue off the boat the other day in preparation for haulout next week which means our meals will be prepared totally à la Galley Kat. With Indian Summer gone and temperatures dropping, comfort food has become the order of the day… …some pasta of course… …a few chopped veggies… …sautéd, seasoned and savoury… …all ooy gooy and cheesy… ONE POT CHICKEN PASTA CASSEROLE Ingredients 4 cups cooked pasta (I used large egg noodles) 3 tbsp butter 1…

RISOTTO ON A BOAT

RISOTTO ON A BOAT

I used to think Risotto, my all time favourite meal, was this delicious mysterious dish that could be enjoyed only in the best of Italian restaurants. Then one day while channel surfing I came upon a cooking show where (get this) a French chef was teaching the Italian host how to cook Risotto. He sautéd minced onion and garlic in some olive oil, added some rice, deglazed with white wine, gradually stirred in heated chicken broth, added some freshly grated…
