CHICKPEA STEW with CORNBREAD DUMPLINGS

CHICKPEA STEW with CORNBREAD DUMPLINGS

As promised, here’s my recipe for delicious Chickpea Stew and Cornbread Dumplings.  For this quantity you can half my Corn Meal Muffin recipe which should give you room for eight or nine dumplings.  The results are very much like chicken pot pie without the chicken. Another time I did add some cooked chicken leftover from Christmas that I had stashed away in the freezer but if you decide to go ‘no face or mother’ to keep it purely vegetarian you…

CHICK PEA SWEET POTATO BURGERS

CHICK PEA SWEET POTATO BURGERS

Meatless Monday today Galley Peeps and I’m not even missing the meat.  After all the celebrations and excesses of last month, something simple and healthy feels really good in our bellies. Smashed chickpeas and some rich grated sweet potatoes make the base for these delicious burgers. Even though tonight’s supper was served up like a traditional burger, these vegetarian patties are great on their own with a side salad or try serving them with your morning breakfast fry-up. Look at…

EASY BOAT POZOLE

EASY BOAT POZOLE

Our steamy summery weather has turned to chilly and rainy which always seems to require something warm and comforting in our bellies. This vegetarian version of boat pozole was made with on-hand ingredients, topped with eggs to give us a bit more protein. The leftovers were equally as good the second night with some leftover shredded grilled chicken added in. Adjust your spices to accomodate your personal tastes (we like it spicy) and you have a super easy complete meal…

FIREY ROASTED CHICK PEAS

FIREY ROASTED CHICK PEAS

Chick peas are a staple onboard R.E.D. I kept several cans with us last year and used them in salads and stir-fries. Easy and healthy. For this next one why not break out your pressure cooker and within 40 – 45 minutes you can have a good quantity at a fraction of the cost of canned.     FIREY ROASTED CHICK PEAS 2-3 cups cooked chick peas 1 tbsp olive oil 1 tbsp smoke paprika 1 tsp garlic powder 1…

CHICK PEA, SAUSAGE and GOAT CHEESE SKILLET

CHICK PEA, SAUSAGE and GOAT CHEESE SKILLET

Captain and the Kat aren’t the only able-bodied chefs in our galley.. During my son Luke’s recent visit, I had him help prepare our evening meal. Always eager to give a hand, he jumped right in, donning his favourite apron. He did a marvelous job browning the sausage…         …adding fistfuls of spinach…         …stirring in the chick peas…   …and dotting the finished product with morsels of creamy goat cheese. This may not…

PRESSURE COOKER CHICKPEAS

PRESSURE COOKER CHICKPEAS

I have started using my pressure cooker for cooking dried beans. It just makes so much more sense economically as 1 cup of dried yields 3 cups cooked… and the dried beans take up so much less space than cans. No additives or preservatives. Salt, aromatics and oils can be added if you wish. This time I added sea salt and pepper, bay leaves and garlic and the resulting flavour was wonderful. Lid on, pressure reached and 40 minutes later…

MOROCCAN CHICKEN TAGINE

Here’s another really tasty and easy pressure cooker dinner. …a mild combination of spices… …juicy bits of browned chicken… …stewed in the pressure cooker for a mere 8 minutes… …an addition of chick peas and almonds and it’s all done…       MOROCCAN CHICKEN TAGINE 5 boneless chicken thighs cut into 1″ pieces 1 tbsp Moroccan spice (1/2 tsp. cayenne 1/2 tsp. turmeric, 2 1/2 tsp cumin, 1 tsp. allspice, 1 tsp. cinnamon, 1/2 tsp. coriander) 2-3 tbsp flour…

ARTICHOKE SPINACH HUMMUS

ARTICHOKE SPINACH HUMMUS

I am thinking I may have to find some way of ‘blending’ onboard. There are so many yummy recipes for soups, sauces and dips that require pureeing. A friend said that next year she will bring her battery operated blender should we ‘need’ a Marguerita or three whipped up… But space is at such a premium that I still haven’t quite come to terms with adding something else to an already well equipped teeny tiny galley. Am open to suggestions……
