CAPRESE CUPS

CAPRESE CUPS

I’ve been trying out some recipes for an upcoming guest visit and wanted to prepare something yummy for breakfast or brunch.  And foremost, something easy.  I don’t want to be spending my time with them cooking all day.  I like make ahead dishes but we don’t have a whole lot of room to stash pre-made meals. This recipe fits perfectly.  I can make it fresh with little effort with ingredients that I can have on hand.  Some cheese, tomatoes and…

TEX MEX RISOTTO with bonus TEX MEX SPICE MIX

TEX MEX RISOTTO with bonus TEX MEX SPICE MIX

Here’s a tasty one for you Galley Peeps.  It was inspired by one of our home delivery plant-based meals.  A simple risotto with a Tex Mex flair. You’ve probably noticed that I’m big on making my own spice mixes.  For one thing, in my tiny galley there’s precious little space for a gazillion spice containers.  And we do love our Mexican type foods so this Tex Mex combo has become a favourite.  We love a little heat too so I…

FIG and CAMEMBERT GRILLED CHEESE with CRISPY MUSHROOM SALAD

FIG and CAMEMBERT GRILLED CHEESE with CRISPY MUSHROOM SALAD

I’m loving this sandwich/salad combo that was inspired by one of  our recent meal delivery recipes.  The sweet fig jam, ooy gooy creamy cheese and toasty crispy bread was a sensory delight.  Then you have the tangy/sweet-ish salad dressing over fresh greens.  But what drove it over the top was the addition of crispy mushrooms that have been tossed, then grilled in parmesan and bread crumbs.  Heavenly perfection. Just a few easy steps, beginning with slicing the mushrooms, then tossing…

HALIFAX DONAIR PIZZA

HALIFAX DONAIR PIZZA

The trouble with setting goals is that you’re constantly working toward what you used to want.” According to Sarah Manguso author of 300 Arguments.  No wonder my goal-setting isn’t working out for me these days. My mind is a pinball machine this week.  ‘Ping’…change direction….’Ping’…there I go again…’Ping’…oooh, I think I’ll try that! Someone mentioned Donair Pizza and all of a sudden I was craving….you guessed it…Donair Pizza. ‘Ping’ Halifax Donair meat One loaf for slicing now.  One loaf to…

SHEPHERD’S PIE POUTINE with BEER GRAVY

SHEPHERD’S PIE POUTINE with BEER GRAVY

Now before you go all judgey on me and say that real poutine is fries, gravy and cheese curd…period!, I happen to know after living almost twenty years in Frenchland (Quebec) , there are many ways to skin a poutine.  A gazillion ways! For me, this whole poutine thing started two years ago when we sailed our boat R.E.D. to the Gaspe area of the Saint Lawrence River from Montreal (sailingred).  One of our most memorable stops was Tadoussac where…

PIGGIES in BLANKETS (a Captain Cooks creation)

PIGGIES in BLANKETS (a Captain Cooks creation)

He’s back! again… I am so loving all of this company in my land galley lately.  This time my guy offered to make us his special Pigs in a Blanket.  Some sharp cheddar, weiner wraps (found in your dairy section) and this time he thought we should use meat from our fave local butcher. Cavicchi’s makes the best sausage bites, little meatballs, gluten free with the perfect blend of spices.  This time, mild Italian. To keep with the simple-no-oven-in-my-galley focus…

EASY SLOW COOKER MAC ‘n CHEESE (a guest in my galley)

EASY SLOW COOKER MAC ‘n CHEESE (a guest in my galley)

Now that we’ve moved back to Nova Scotia my son Luke gets to visit us more often.  And he’s such a great helper, always asking  what he can do to assist.  One weekend he spent the time putting together some shelves so I could organize our wee place a bit better. Another time he spent the afternoon with Francois clearing the brush around Duck Pond, our newly discovered eco-system.  We knew there was a stream that ran along the side…

SAVOURY BAKED NOODLES (KUGEL)

SAVOURY BAKED NOODLES (KUGEL)

I love kugel, especially the savoury kind.  Well, in truth I love anything with pasta and cheese.  It’s the ultimate comfort food especially welcomed now that we are heading into some chilly days.  I call it my hibernation food. This next recipe was made to be a complete meal with spinach and mushrooms and lots of dairy for protein.  I baked it no-oven-galley-style in my stove top Omnia but for you land folks it easily transforms to a more traditional…

ROASTED CORN CHEESE DIP

ROASTED CORN CHEESE DIP

I so do miss our happy hours.  It seems that lately one day melts into the next and half the time the only sure reference of date we have is what month it is….as the conversation goes: what day is it?  I don’t know but I think it’s still September.  Our big move is coming up soon (a reference to our craziness on my other blog here if you are interested) so most days are consumed with making lists and…

BAKED EGGS IN ROASTED PEPPERS

BAKED EGGS IN ROASTED PEPPERS

Chilly rainy days mean cooked breakfast aboard R.E.D.  I had some fresh greens, peppers and farm eggs just begging to be turned into something belly warming. The greens I used were a mix of baby kale and arugula which gave a more crispy result.  Small chopped spinach leaves work well too.   Choose your peppers wisely if using the Omnia stove top oven.  They should be small enough to sit as flat as possible.  Also, when cutting them try to…
