Garlicky White Bean, Artichoke and Broccoli

Garlicky White Bean, Artichoke and Broccoli

A very long day, our weekend guests  had just left and I really didn’t feel like turning around and making supper.  Where’s my glass of wine and foot stool?  I’ll just sit here while someone cooks. No offers? No, don’t get up, I take care of it (me walking toward the kitchen). This will have to be a ‘shop my pantry’ meal. I found one head of broccoli in the refrigerator wanting some attention. There was also a can of…

CHEESY ARTICHOKE DIP PIZZA

CHEESY ARTICHOKE DIP PIZZA

For this next deeelightful recipe I used my recipe for Artichoke Dip as inspiration (recipe link here) and modified it somewhat for this Friday pizza party.  Trying to insert more greens into our diet (doctor’s orders), I chopped a few Brussels sprouts to add to the mix. ARTICHOKE SPINACH HUMMUS

ARTICHOKE SPINACH HUMMUS

I am thinking I may have to find some way of ‘blending’ onboard. There are so many yummy recipes for soups, sauces and dips that require pureeing. A friend said that next year she will bring her battery operated blender should we ‘need’ a Marguerita or three whipped up… But space is at such a premium that I still haven’t quite come to terms with adding something else to an already well equipped teeny tiny galley. Am open to suggestions……
