ENERGY BARS

This is a very easy recipe to make and have on hand for on-the-go snacks
and especially for a quick energy fix.
No added sugar but these little morsels of deliciousness are really sweet.
Galley Kat recommends doubling the recipe – they are that good!
GALLEY KAT ENERGY BARS
1/2 cup pitted dates
1/2 cup dried cherries
1/2 cup dried blueberries
1 cup raw almonds
Soak dried fruit in warm water for about 30 minutes to soften.
Process almonds until fine crumbs.
Drain fruits and add to processor.
Process until your machine starts jumping and fruit adheres to sides of bowl.
Press into a plastic wrap lined container (mine was 4″ x 8″)
Refrigerate for a couple of hours…
Cut into bars (size of your choice)…
and wrap in parchement paper.
These should keep well in your cooler or refrigerator for at least a week
(if you are lucky to have them last that long).
