Spinach Tomato Orzo Soup
This is a quick easy warming soup made with a few simple ingredients
1/2 cup onion chopped
2 cloves garlic minced
3 generous cups fresh spinach
1 – 15 oz can diced Italian tomatoes
1 cup orzo pasta
4 cups chicken or vegetable stock
salt & pepper to taste
a few fresh oregano leaves minced
Drizzle saucepan with olive oil .
Add onions and saute until tender.
Add garlic and saute gently being careful not to scorch
as it tends to make the garlic bitter.
Add canned tomatoes and seasonings
Bring to a boil and reduce heat to medium.
Add orzo cook for 12 – 15 minutes until tender.
