LOBSTER and PAN-ROASTED CORN CHOWDER

A year has ended.

Another has arrived all fresh with resolutions and expectations.

It’s the time of the year that calls for an extra special meal

shared with special guests.

 

A very rich and very easy one-pot supper that I created

that has brought back memories of places I’ve lived where lobster

was served as a traditional New Year’s celebration.

LOBSTER and PAN-ROASTED CORN CHOWDER

what you will need

2 tbsp butter

3/4 cup corn cut from the cob

1/2 cup chopped onion

1/2 cup celery

1/2 cup chopped red pepper

2 cups potatoes, cut into 1″ pieces

1/2 tsp dried thyme

1/2 tsp sea salt

1/2 tsp freshly ground pepper, with more to garnish

1 1/2 cups chicken stock + any juices reserved from lobster

generous pinch of Hot Old Bay seasoning

(in a pinch, haha, if you don’t have Old Bay,

try using a pinch of cayenne and a pinch of ground celery seed instead)

4 cups of uncooked lobster meat, cut into bite-sized pieces

1/2 cup plain Greek yogurt or sour cream

1-1/2 cup heavy cream

1 cup milk

3-4 tbsp chopped fresh parsley to garnish

After gathering all your ingredients together,
melt butter in saucepan and sauté corn vigorously until it starts to brown
and you begin to smell the sweetness of roasted corn.
Add celery, onion and red peppers and continue to sauté for 3-4 minutes.
Add potatoes, seasonings and stir to combine.
Add broth and juices collected from the lobster
and simmer until potatoes are tender.

Combine yogurt with lobster meat.

sprinkle with more Old Bay if you wish.

When potatoes are done to your liking stir in lobster mixture,
cream and milk.
Heat through until lobster is cooked being careful not to boil.
Ladle into serving bowls and sprinkle with parsley and a grind of fresh pepper.
As with any evening of entertaining guests it’s always great to know
there is just one cooking pot and four empty bowls to clean at the end of the evening.
