LOBSTER and PAN-ROASTED CORN CHOWDER

A year has ended.
Another has arrived all fresh with resolutions and expectations.
It’s the time of the year that calls for an extra special meal
shared with special guests.
A very rich and very easy one-pot supper that I created
that has brought back memories of places I’ve lived where lobster
was served as a traditional New Year’s celebration.
LOBSTER and PAN-ROASTED CORN CHOWDER
what you will need
2 tbsp butter
3/4 cup corn cut from the cob
1/2 cup chopped onion
1/2 cup celery
1/2 cup chopped red pepper
2 cups potatoes, cut into 1″ pieces
1/2 tsp dried thyme
1/2 tsp sea salt
1/2 tsp freshly ground pepper, with more to garnish
1 1/2 cups chicken stock + any juices reserved from lobster
generous pinch of Hot Old Bay seasoning
(in a pinch, haha, if you don’t have Old Bay,
try using a pinch of cayenne and a pinch of ground celery seed instead)
4 cups of uncooked lobster meat, cut into bite-sized pieces
1/2 cup plain Greek yogurt or sour cream
1-1/2 cup heavy cream
1 cup milk
3-4 tbsp chopped fresh parsley to garnish
Combine yogurt with lobster meat.
sprinkle with more Old Bay if you wish.
