EASY MASHED POTATO SOUP

Here I am again with another of my
Mashed Potatoes in Disguise recipes.
Earlier this week I gave you a very elegant brunch which included Waffled Mashed Potatoes (recipe here)
More leftovers gave us some yummy
Mashed Potato Kale Cakes with Rouille (recipe here)
This next recipe is perfect
for when you have some leftover mashed potatoes
hanging around your galley
and you really don’t feel like cooking too much of anything.
This was our soup-for-supper evening
and it took just a few minutes from stove top to table.
EASY MASHED POTATO SOUP
2 main servings
what you will need
2 tbsp butter
1/4 cup minced onion
2 cups mashed potatoes
2 cups milk
2 cups chicken broth
1 tsp ground celery seed
Sea salt & ground pepper to taste
chopped chives or parsley to dress
putting it all together
In your saucepan sauté the onion in butter
just until the onion becomes translucent and softened.
Stir in potatoes and blend with onion.
Add milk and chicken broth.
Season and very gently simmer to bring the flavours together.
Ladle into your soup bowls
and serve with some fresh crusty bread.
