GRILLED SCALLOPS with MANGO SALSA

I can’t get enough grilled scallops.

They take so little time to cook and the simplest of seasonings make them

melt-in-your-mouth delicious…

….a little spice, a little citrus…
…a little butter, a little coconut oil…
oh so simple…

oh so good…

 

GRILLED SCALLOPS with MANGO SALSA

2 servings

for salsa

1 ripe mango, peeled and chopped

1 avocado, chopped

1 serrano chili, minced

juice and rind of 1 lime

1 tbsp grated fresh ginger

1/2 cup chopped parsley or cilantro

sea salt to taste

Mix all together and set aside.

for scallops

6 sea scallops

1 tbsp R.E.D. seasoning (see link to recipe)

2 tbsp coconut oil

2 tbsp butter

juice and rind from 1/2 lemon

2 tbsp chopped green onion tops

Rinse scallops and pat dry

Rub thoroughly with seasoning

Heat coconut oil and butter in heavy pan until bubbly

Sear scallops until browned

Flip and brown second side.

Add lemon juice and rind, stir to coat scallops and turn off heat.

The remaining heat in pan should be enough to finish cooking the scallops.

Serve with salsa and jasmine rice.

Drizzle some of the lemon butter over all.

Garnish with chopped onion.
