GRILLED CHEESE SANDWICHES with CHOCOLATE BALSAMIC VINEGAR PAN-ROASTED CHERRIES

I’ve been given some home work.

Our dear friends recently gifted me with a bottle of Chocolate Balsamic Vinegar.

…the same friends who challenged me with that wonderful elixir

Blood Orange Vinegar.

I had a lot of fun with that,

metering it out spoonful by precious spoonful.

Here are a couple of my simple creations…

Now I’ve been tasked with coming up with a recipe or two

using another of their wonderful finds.

I consulted my fave cookbook The Flavor Bible

to see what was said about balsamic vinegar affinities.

Sure enough dark chocolate was one…

but then doesn’t chocolate go with everything?…

just like bacon …

…mmm,

Chocolate Balsamic Vinegar and bacon?

…wheels turning.

Next I did an internet search for more ideas…

the obvious was marinades or glazes for pork.

Next I checked out some of my favourite food bloggers,

and I think I have come up with a very share-worthy recipe.

GRILLED CHEESE SANDWICHES

with

CHOCOLATE BALSAMIC VINEGAR

PAN-ROASTED CHERRIES

(I couldn’t think of any good way to shorten the title)

Makes 3 sandwiches

1 can of pitted bing cherries, drained

3 tbsp chocolate balsamic vinegar

6 slices bacon, cooked to desired done-ness (is that even a word?)

2 cups shaved smoked cheese (I used a smoked Jarlsburg)

6 slices of bread

enough mayonnaise to paint each sandwich on both sides

Heat the vinegar in a saucepan just until it begins to get smokey.

Add the drained cherries and simmer in the vinegar,

pressing the cherries into the pan to release the extra juice.

Continue to gently simmer and stir until most of the liquid is gone.

The remaining liquid will be a wonderful thickened syrup.

Remove from heat and drain the cherries in a sieve, reserving the syrup.

You’re going to want that for later.

Set aside to cool.

Next assemble the rest of your ingredients.
I quite often use my vegetable peeler to shave cheese.
It takes up much less room in the galley that my box grater.
Now assemble your sandwiches.
Pile the cheese on each slice of bread.
Top with bacon and cherries.
Slap both slices of bread together
and paint each outside surface with mayonnaise.
Grill until golden brown and cheese is all melty.
Remember that syrup that I told you to reserve?
You did scrape every last delicious, thick, tangy, chocolatey morsel I hope?
…because you’re going to want to dip each bit of your sandwich into it.
