SHRIMP CORN BLACK BEAN SALAD
Continuing on with the salad train,
here is another fresh and easy recipe
that makes a wonderful bursting with flavour
main course meal.
I used shrimp for this version,
but adding some tuna or grilled chicken
would be equally as good…

SHRIMP CORN BLACK BEAN SALAD

4 side servings

2 generous main servings

2 cups raw uncooked medium shrimp

2 cup fresh corn cut off the cobs (about 4 cobs)

2 tbsp lime juice

4 tbsp butter

2 tbsp chopped parsley

2 cups black beans (canned, drained)

2 cups grape tomatoes, sliced lengthwise

2 green onions, chopped

1 avocado, chopped

1 head Romaine lettuce, chopped

2 tbsp lime juice

1 tbsp honey

1/4 olive oil

1/2 tsp ground cumin

salt & pepper

several handfuls of nacho chips

In a fry pan heat butter, lime juice and parsley

Sauté corn on high for about 2-3 minutes to caramelize slightly.

Add shrimp and stir the mixture until shrimp is pink,

about another minute or two will do.

Remove from heat to cool.

In large salad bowl toss together beans, tomatoes, onions, avocado and lettuce.

Add cooled shrimp and corn.

Whisk together lime juice, honey, oil and seasoning.

Drizzle over vegetables and toss to coat well.

If not quite ready to serve place chips around edge of salad bowl.

When ready toss all together and serve.

If you want a bit more heat, top with slices of pickled jalapenos and a shake of dried chilis.
