QUINOA SALAD with GRILLED HALLOUMI
My latest food crush – halloumi.
It’s this wonderful salty squeaky Cypriot cheese.
It has a high melting point which lends itself well to grilling.
Here is a wonderfully fresh and tasty salad, perfect for a simple evening meal.
QUINOA SALAD with GRILLED HALLOUMI
1 tbsp red wine vinegar
1 large garlic clove, shredded
1 tsp sugar
1 tsp dried chili flakes
4 tbsp olive oil
healthy dash of sea salt & pepper
4 small Persian cucumbers, quartered and chopped
2 green onions, chopped
1 cup quinoa
1 cup water
4-5 cups arugula
1/2 lemon
8 slices halloumi
Whisk together first 6 ingredients.
Toss in cucumber and onions to coat well and set aside.
Cook quinoa in water.
Add quinoa and arugula to cucumber mix and toss to mix.
Arrange on 2 (for main) or 4 (for side) plates.
Grill halloumi until slightly browned on each side.
Place halloumi slices on top of each salad.
Squeeze fresh lemon juice generously over each salad.
Serve warm.
