QUINOA CABBAGE SALAD

Not your typical cabbage slaw, this salad with a delicious Asian kick also packs in some extra protein, making it even more perfect as a meal in itself.

QUINOA CABBAGE SALAD

what you willl need

2 -2/1/2 cups cooked quinoa (1 cup of uncooked)

1 package cabbage slaw

1 or 2 green onions, chopped

1 cup toasted cashews or  peanuts (dry toast in a small fry pan)

For dressing

¼ cup  peanut butter

2 teaspoons freshly grated ginger

3 tablespoon soy sauce

1 tablespoon maple syrup

1 tablespoon red wine vinegar

1 teaspoon sesame oil

1 teaspoon olive oil

Water to thin

In your salad bowl whisk together ingredients for dressing until creamy and smooth.

Add water by the tablespoon until dressing consistency.

Add cooked quinoa and toss, coating well.

Add the cabbage slaw and onions and toss.

Top with roasted nuts.

Serve with your fave grill-of-the-day (ours was honey sesame turkey wings)

There was more than enough for two healthy servings the next day.  It was so good, I could easily have enjoyed a bowlful for breakfast.
