This salad was almost straight out of my now fave recipe blogger
Nagi from RecipeTin Eats
and creator of my fave place to store my recipes offline
She creates easy dishes, full of flavour, quite often Asian-inspired,
that no matter what,
I’ve been able to fit them into my little galley life in one form or other.
I made this salad on the weekend when my daughter and her boyfriend
popped in for a brief visit before heading out to a Metallica concert.
I served it with another favourite salad
and a simple
just toss and serve…
MINTED CABBAGE & EDAMAME SALAD
1 cup shelled edamame
3 cups shredded cabbage
(I quite often will buy packages of already chopped cabbage greens –
this time it was a mix of red, green, white with chopped kale)
1/2 cup parsley, roughly chopped
1/2 cup fresh mint, roughly chopped
1/3 cup grated Parmesan (with some extra shavings for garnish)
2 tbsp freshly squeezed lemon juice
3 tbsp olive oil (to which I added 2 dashes of sesame oil)
toasted sesames seeds to garnish
Sea salt & pepper to taste
Mix together cabbage, edamame and radishes.
Add parsley, mint and Parmesan and toss gently with your hands
Whisk together lemon juice and oils to emulsify
Season with salt and pepper.
When ready to serve drizzle dressing over salad,
give a light toss and garnish with shaved Parmesan
and a sprinkle of sesame seeds
