LEMONY MINTED ORZO PASTA SALAD

Orzo is such a versatile little pasta.
Great in soups, casseroles and salads…
Perfect used in side dishes or as a main headliner.
Easy to cook and one little bag goes a long way.
LEMONY MINTED ORZO PASTA SALAD
4 side servings
4 cups cooked cooled orzo
1 tbsp olive oil
juice & zest from 1 lemon
2 green onions, sliced
2-3 mini cucumbers, chopped
2-4 tbsp fresh parsley, chopped
2-4 tbsp fresh mint, chopped
sea salt and freshly ground pepper
Toss the olive oil with the orzo,
just enough to coat,
then add the rest of the ingredients
for a light and easy side dish
to accompany your back-of-the-boat barbecue creation.
Or add one of these options
to make this a main meal salad:
1. A small can of tuna packed in oil.
If using, add this directly to the cooked orzo
and omit adding the olive oil
2. Crumbled feta
3. Grilled chicken
