EASY PICKLED CABBAGE SALAD

Do you ever crave something crunchy and vinegary?
How about sliced cucumber and green onions in a bath of vinegar with lots of pepper?
This following recipe really appealed to me for that very reason,
and it keeps very well,
increasing in its ‘vinegaryness’ with each passing day.

EASY PICKLED CABBAGE SALAD

1-1/2 cup white vinegar

1-1/2 cup water

1/3 cup sugar

1 tbsp sea salt

1 tsp celery seed

1 small cabbage, cored and shredded

1 red pepper, chopped

2 small carrots, julienned

3 small cucumbers, quarted and chopped

Mix together the first 5 ingredients and set aside for sugar and salt to dissolve.

In a large bowl mix together all the veggies.

Give the brine a good stir to make sure sugar and salt are dissolve

and pour over veggies.

Refrigerate until ready to devour.

…fresh and crunchy and keeps for at least a week…
…a healthy addition and any meal…
…and a little bowl or two now and then
satisfies my vinegar/crunch cravings.
