When fresh basil isn’t available why not try spinach?…
5 oz package of baby spinach
1/4 cup pine nuts
2-3 garlic cloves
1/4 cup grated Parmesan
2-3 tbsp olive oil
Place all in your blender and whirl away until you have a smooth consistency.
Saving battery power onboard I used my little Kitchen King Pro
Season with salt and pepper.
This makes an easy and healthy veggie dip.
Or why not try it stirred into some pasta?
…cook yourself some pasta and mix in a few spoonfuls of pesto…
